Breakfast the First Meal
If sleep is the most essential thing to the body. The second most is how you wake, how you get your day started. That's what makes breakfast the most important meal of the day. The first meal sets the tone for how the day goes. Where its headed, and how we feel going forward.
Starting the day with a healthy balanced breakfast prepares us to face the things the day presents us both fully awake; and if sustaining enough, fully energized and sustained to deal with whatever we need. As the first meal, breakfast even in simplified form allows us to leave rest behind and focus on the necessities of being awake.
And things like work and play or health and responsibilities can get our full attention without the distraction of mid morning stutter.
Ingredients
- 2 eggs
- 4 oz meat - bacon/sausage/steak
- 4 oz breakfast gain -cereal
- 8 oz milk/water/juice
- 1 slice toast
- 1 piece fruit of choice
Instructions
- 1. Eggs can be cooked any style - usually ~ scrambled fried or poached
- 2. Breakfast meat is usually bacon or sausage ~ some substitute steak or other meat
- 3. Breakfast cereal - in the south ~ grits or oatmeal
- 4. Add milk fruit juice or water
- 5. Toast or breakfast bread completes most any meal
- 6. To cure mid morning munchies - 1 piece of fruit of choice
A Quick Breakfast Bread
Streusel Bluberry Muffins
1 1/2 c Unbleached all-purpose flour
1/4 c Granulated sugar
1/4 c Packed brown sugar
2 ts Baking powder
1/4 ts Salt
1 t Ground cinnamon
1 Egg, slightly beaten
1/2 c Unsalted butter, melted
1 c (to 1 1/4 cups) blueberries,
-fresh or frozen & defrosted
1 t Grated lemon zest
-----STREUSEL TOPPING-----
1/2 c Chopped pecans
1/2 c Brown sugar
1/4 c Flour
1 t Ground cinnamon
1 t Grated lemon zest
2 tb Unsalted butter, melted
-----GLAZE-----
1/2 c Powdered sugar
1 tb Fresh lemon juice
Preheat oven to 350 degrees and place paper liners
in one 12-cup muffin pan. In a large bowl, sift
together flour, sugar, brown sugar, baking powder,
salt and 1 teaspoon cinnamon. Make a well in the
center. Place egg, 1/2 cup melted butter and milk in
the well. Stir until combined. Gently stir in the
blueberries and 1 teaspoon of the lemon zest. Fill
each muffin cup 3/4 full with batter.
Make streusel topping by combining pecans, brown
sugar, flour, cinnamon and lemon zest with a fork.
Pour in melted butter and stir to combine. Sprinkle
topping over each muffin. Bake for 20 to 25 minutes
until muffins are browned and firm.
Make glaze by mixing powdered sugar and lemon
juice. Use a teaspoon to drizzle glaze over warm
muffins. Serve immediately.
Brunch - more than Sunday and Holidays
Some days you don't want to get out of bed early. Brunch is a meal made and eaten usually mid to late morning. Ideally served around the holidays; like Mothers day or Thanksgiving or even Easter for example, Brunch is the meal when you don't want to wake early for breakfast and you don't want to wait for lunch.
It general composes some breakfast items such as poached eggs or a frittata as well as some light lunch items such as a crab salad or Monte Cristo sandwiches. Typically in a brunch buffet you'll have some type of french toast or croissants as well as a carved meat item like a glazed ham. or roasted lamb or beef. While built around the holidays, brunch can made for any day. All you need is a little time some of our ideas.

Basic Frittata - with a little cheesiness
- 10 eggs whisked
- 1.5 oz Parmesan Cheese
- .5 oz Cheddar Cheese
- .5 oz mozzarella
- 1 oz smoked gouda
- to taste Salt & Pepper
- 1 pat butter
- 1 Tblsp chopped Parsley
Instructions
- In medium bowl, blend together eggs, cheese, pepper, and salt.
- Heat 10 inch non-stick, oven safe saute pan over medium heat.
- Add butter to pan and melt.
- Pour egg mixture into pan and stir with rubber spatula.
- Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.
- Sprinkle with parsley.
- Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy.
- Serve immediately.
French Toast Casserole
- 2 boxes frozen cinnamon-swirl French toast
- 4 eggs
- 3 cups milk
- 2 cups pure maple syrup
- 1 teaspoon pumpkin pie spice
- 1/3 cup marmalade
- 1 Banana Sliced
Instructions
- Spray two 9x13-inch baking pans with cooking spray. Place French toast pieces evenly in the bottoms of prepared pans; set aside.
- In a medium bowl, whisk together eggs, milk, 1 cup of the maple syrup, and the pumpkin pie spice until well combined. Pour evenly over French toast slices in each pan. Cover with plastic wrap; let sit for 1 hour, occasionally pushing French toast down into mixture.
- Preheat oven to 350 degrees F. Remove plastic wrap and place pans in oven. Bake about 1 hour or until golden brown.
- In a small saucepan, heat the remaining 1 cup maple syrup, the marmalade, and sliced banana over medium-low heat until heated through. Serve warm over French toast.

Lunch - A Break in the Day
Lunch is the meal in the middle of the day to remind you you can't wait till dinner. Assuming you ave someone set on preparing a good nutritious - tantalizing meal. Or perhaps this is the day you decide to indulge. Either way the lunch meal is a time to eat light and quick to prolong productivity until what we term "quiting time".
Lunch offers a subtle sustenance to energize us to finish the work day and ease into dinner without the lag of hunger weighing us down and burdening dinner plans.
For some it is not as high a priority breakfast and is quite often overlooked when one is presented with mountains of work to accomplish. While to others, especially those considering a light dinner, a relaxed lunch can involve a heavy burger and fry combo (in America)... Most however though chose something in between - a light sandwich or salad; perhaps some fruit or juice. But those who just don't have the time or are need of a quick boost...
They often choose a small snack. whether a healthy snack bar or a splurge on high calorie sugar candy - when on the go you often think quick light and size to get you through the lull of the day.

Club Sandwich
There are many variations. But here are some common ingredients.
Ingredients
- 1 Bag - Publix Ciabatta Bread or bread of choice
- 1 Head - Romaine or Leaf Lettuce
- 4 each - Beefsteak Tomatoes (12 slices)
- 1 (16oz) pack - Applewood Smoked bacon {bryan}
- 1.5 lb - Sliced Turkey
- 1.5 lb - Sliced Ham
- 1 - 8oz jar Kosher Pickles
- 12 slices - Swiss Cheese or Smoked Gouda cheese(best)
- 3/4 Cup - Chipotle Mayo
Instructions
- If Bread is not sliced. Slice each roll in half.
- Spread 1 tablespoon chipotle mayonnaise over 1 side of each bread slice.
- Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste.
- Place 2 slices bacon over the tomatoes and top with 1/8 of the turkey 1/8 of Ham.
- Season meat (very lightly) with salt and pepper, to taste.
- Top Meats with 2 Slices Smoked Gouda or preferred cheese.
- Finish with Pickle slices.
- Place top half of bread over stack to complete sandwich.
- Note: can be served alone or suggested with a small bag of chips.
- Also note: Chipotle mayo can be substituted with regular mayo
Making Quick Granola Bars
3 Cups Quaker Oats
1 (14oz) Can Condensed Milk
2 Tbsp Melted butter
1 Cup Flaked Coconut
1 Cup SemiSweet Chocolate Chips
1/2 Cup Dried Cranberries
1. Preheat oven to 350 degrees.
2. Grease a 9x13 inch pan.
In a large bowl, mix together ALL ingredients with your hands until well blended.
Press flat into the prepared pan.
Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them.
Note: Lightly browned edges will give you moist, chewy bars.
Let cool for 5 minutes.
Cut into squares then let cool completely before serving.
